Youssuf's Halal Braised Short Ribs Recipe


It's been a while since Youssuf cooked an amazing recipe for us- he is a true meat explorer (see how he smoked beef back ribs for the first time here)! So when he shared his recent short ribs experiment using only halal ingredients, we thought we needed to share ASAP!

Youssuf's Awesome Halal Braised Short Ribs


  • A slab of La Carne's Certified Angus Beef Short Ribs, cut into 2-inch thick cubes for slow cooking, you can request us to cut them for you
  • Salt and pepper
  • 1 tbsp Tomato Paste
  • 2 bulbs of garlic, cut in half cross wise
  • Cranberry juice
  • 1-2 cups Beef Stock

Kitchen tools you'll need

  • Aluminium foil
  • Sieve
  • Baking dish
  • Oven

First off, check out that La Carne marble 😍


STEP 1:  Season ribs generously with salt and pepper. Sear the ribs well on a roasting pan either on an electric grill or gas stove

STEP 2:  In the same roasting pan, add one tbsp of tomato paste and make sure to beat it into the ribs' juices to cook the paste. Add the garlic. It's okay if they break apart a bit!

STEP 3: Add your deglazing liquid (cranberry juice or grape juice is fine too). On a low heat, reduce liquid by about half.

Step 4: Add your beef stock or broth to an inch below the top of ribs. Cover with foil and put inside a preheated oven at 170-180 C for 2.5 hours

Step 5: Remove the ribs and place on a plate, removing the bones if you like (it's very satisfying)! Pour all the cooking fluids through a sieve and mash the garlic through the sieve which will add a beautiful deep and slightly sweet taste to the sauce. Make sure you scrape all the garlic off the bottom of the sieve! Pour some sauce on each ribs. Sprinkle some flaky salt and ENJOY!
